Preparing for 5 1/2 weeks on the road…
by Angela
Since we work for ourselves, we can take any day off we please, but I usually only take Sundays off. Since today is Sunday, I’ve been spending my leisure time making our menu for the trip and creating the corresponding grocery lists. Planning meals days in advance and ensuring you have all the supplies and equipment necessary to prepare these meals (and storing everything in a confined space) is NOT easy. But, I’ve found that using a spreadsheet program works wonders.
I’m only planning 10 days in advance right now because: 1) we only have so much storage space in the RV and 2) it’s such a chore that 10 days is about all I want to plan on my day off today. I remembered not plan any meals for our stay in Texas. We’ll be at my mother’s ranch and she’ll make us eat her cooking (your sympathy is appreciated).
Since we use the closet in our RV as our pantry, I’m going to buy some plastic, lightweight crates today to use as shelves. Shuffling things around in there in the past has always resulted in our sandwich bread turning into flatbread. I’m hoping the shelves will save future generations of bread, chips and cookies.
Richard bought The Open Road Cookbook by JoAnna M. Lund and she has lots of hints on cutting carbs and calories. I don’t want this to be one of those trips where our gas mileage is affected by added girth. Heh…
Ali and I are going to go shopping this afternoon to buy the non-perishable items for the first 10 days of our trip. The excitement is mounting over the impending departure, the countdown has begun (7 days!), and we all have nomadic fever something fierce!
