Delectable Donuts

You have to be careful with this recipe because it involves hot oil, and I certainly DON’T recommend frying anything in hot oil while you’re cruising down the highway! Well, I don’t recommend cooking anything while on the highway. Try this quick and yummy favorite when the children are far away from the stove.

    3 tablespoons shortening
    2/3 cups sugar or Splenda®
    1 egg
    2/3 cup milk
    3/4 teaspoon salt
    1 teaspoon nutmeg
    5 teaspoons baking powder
    3 cups flour or low-carb baking mix

Stir the shortening, sugar/Splenda® and egg together until most of the lumps are gone. Add milk, salt, flour, nutmeg and baking powder. The dough should be pretty thick; add more flour if you need to. Roll it out as best you can on that tiny bit of RV counter space you have. The dough should be about 1/4″ thick. Cut with a donut-shaped cookie cutter, or roll the dough into balls for donut holes. Fry in oil AND BE CAREFUL! After they’re cooked through, place them on paper towels to soak up the oil.

Chocolate Coating
Dump a bag of semi-sweet or milk chocolate chips into a bowl and microwave at 50% (or on defrost) for a couple of minutes. Sometimes the chocolate chips will look like they’re not yet melted, but will instantly collapse when you poke them with a spoon.

Dip your donuts face down in the chocolate, covering half of the donut. Place them on a plate, chocolate side up, and allow them to cool and harden…or dive right in and make a mess. Either way is fine.

Powdered Sugar Topping
Sprinkle powdered sugar on top of still-hot donuts. It’ll stick to the oil. If you want to save on carbs and calories, you can mix Splenda® with powdered milk to make fake powdered sugar. Don’t tell your spouse and kids…see if they notice the difference. A pinch of cinnamon mixed in is good, too.

Glazed Topping
Mix powdered sugar with milk (or Splenda®, powdered milk, and milk) until nice and gooey. Dip the donuts in this glaze and allow to dry.
